Un piatto che unisce la dolcezza del maialino nero alla rotondità del vino rosso, la vellutata delicatezza del cremoso alla nota fragrante del porro, per un’esperienza che parla di territorio, emozione e identità mediterranea.
Una ricetta che scalda il cuore e conquista il palato, perfetto per celebrare la stagione dei colori intensi e dei sapori profondi. La protagonista è la guancia del maialino nero Casertano, razza autoctona dal gusto inconfondibile e dalla carne tenera e succulenta. Dopo una delicata pulizia, lo chef la fa tostare in padella per sigillarne i sapori, poi la lascia brasare lentamente per tre ore in un profumato vino rosso insieme a sedano, carote e cipolla. Le note aromatiche di alloro e timo completano la cottura, regalando al piatto un bouquet di profumi che evocano la terra e le vigne campane. A dare equilibrio e morbidezza, il cremoso di patate, realizzato con patate setacciate e mantecate al burro, sale e pepe, che diventa la base vellutata su cui adagiare la guancia. Il tocco finale è il porro croccante, tagliato a julienne, immerso nel latte e poi fritto dolcemente: una carezza croccante che esalta la morbidezza della carne e la rotondità del fondo di cottura ridotto.
Nel piatto si fondono tradizione e raffinatezza, in un’armonia di contrasti: il morbido e il croccante, il dolce e il sapido, il calore del vino rosso e la freschezza erbacea del timo. Ogni boccone racconta un viaggio tra i sapori del territorio campano, reinterpretati con eleganza e tecnica.

Per il cremoso di patate
Procedimento
Pulire le guance dal grasso in eccesso, quindi tostarle in padella con un filo d’olio extravergine per sigillarne i succhi. In un tegame a parte, preparare un trito di sedano, carote e cipolla e farlo soffriggere lentamente fino a doratura. Unire le guance rosolate, sfumare con il vino rosso fino a copertura, aggiungere alloro e timo e cuocere a fuoco lento per circa 3 ore. Lessare le patate, passarle al setaccio e mantecarle con burro, sale e pepe fino a ottenere una consistenza vellutata. Tenere in caldo. Tagliare il porro a julienne sottile, immergerlo nel latte per qualche minuto, poi friggerlo in olio a 130°C fino a doratura. Scolare su carta assorbente e salare leggermente. Quando le guance sono tenere, filtrare il fondo di cottura, ridurlo sul fuoco e aggiustare di sale. L’evento, patrocinato dal Comune di Pomigliano d’Arco, insieme ai Comuni di Sorrento, Piano di Sorrento e Sant’Agnello, celebra la missione scientifica e umanistica del prof. Vincenzo Ferraro, figura di spicco della scienza internazionale, la cui eredità culturale è oggi portata avanti dalla nipote Maddalena Ferraro. Il Premio 2025 sarà conferito al Dott. Francesco Pecora, Post-Doc presso il Dipartimento di Fisica e Astronomia dell’University of Delaware (USA), per i suoi studi sulla fisica spaziale e la dinamica delle particelle. Ad aprire la cerimonia, moderata dalla Prof.ssa Maria Sorbo, saranno i saluti istituzionali del Dott. Mario Ambrosiano, Sub Commissario del Comune di Sorrento, del Dott. Marcello Aversa, Assessore alle Politiche Giovanili e Turismo del Comune di Sant’Agnello, del Dott. A chiudere la manifestazione sarà la presidente Maddalena Ferraro, che ribadirà il valore della cultura come linguaggio universale capace di unire scienza e umanità, secondo il suo motto: «La cultura non deve annoiare».
